Scrambled Egg with Onion

Instructions
1. | Peel the onion and cut it into thick strips. Beat the eggs with 1/4 tsp. of salt. |
2. | Place 3 tbs. of oil and beaten eggs in a heated non-stick pan; scramble over medium heat until the eggs are 50% cooked. Set the eggs aside. |
3. | Add 1 tbs. of oil, onion and 1/4 tsp. of salt to the same pan; sauté until the onion reaches desired softness. |
4. | Turn off the heat. Stir in the eggs and use the remaining temperature of the pan to cook the eggs through. |
